Your momma never made Tuna Casserole like this!

Tuna Casserole - 4 servings

1/2 onion chopped
1 Jalapeno chopped (optional)
Shredded cheese - amount depends on how Chessey.
2 -3 Garlic cloves chopped.
1/2 cup peas
8 ounces penne pasta (Cooked until al dente)
Cream of mushroom soup
Mix a little milk with miracle whip
Lemon fresh squeezed
Salt and pepper to taste
1/4 tsp Garlic powder
1 Tbsp Basil
2 Cans Tuna (in water)

Heat oven to 375. Saute onion, Jalapeno, garlic together, and soup, milk
mixture, season, lemon and
add spices. Add tuna and peas. Last add cooked pasta. Layer into casserole dish. spread a layer and then shredded cheese and do so until finished. Sprinkle cheese over the top and bake for 10 minutes.

Serve with salad or roll and a white or rose wine.

Calabrian Chicken, Pepper, Tomato, and Potato Stew

Calabrian Chicken, Pepper, Tomato, and Potato Stew - 4 servings 
1/2 cup extra-virgin olive oil, divided
1 pound boneless chicken cut into cubes.
1 large onion - roughly chopped.
1 large green bell pepper into 1 inch pieces
1 large Enjoya Bell Pepper into 1 inch pieces
4 - 5 Brown Mushrooms.
2 cloves garlic chopped
2 cups diced fresh tomatoes
2 tbsp parsley
2 tbsp basil
1/2 tsp sea salt
1/4 tsp ground pepper
1/4 tsp crushed red pepper or to taste
1 Jalapeno chopped (optional)
2 Yukon gold potatoes, halved and cut into 1/4 inch rounds.

Heat 3 tablespoons of olive oil in a large saucepan over medium heat. Add
chicken and cook until browned. Then remove and set aside. Add the remaining oil and saute the onions, peppers, jalapenos and garlic. Stirring for 3 to 4 minutes. Add in garlic and stir. Add the chicken back to the saucepan along with tomatoes, parsley, basil, salt, pepper, and crushed pepper. Stir bring to boil, then reduce heat and simmer for 20 minutes. Remove lid stir and add potatoes and mushrooms replace lid and continue to cook until tender.

This is great to make ahead of time.

Serve with a salad or roll and a red wine.

Chicken and veggies over Linguine

Sometimes you just need to have something fast and easy when you don't feel like cooking. Well here is just the recipe.

Chicken and veggies over Linguine

Serves 2
6 oz Linguine - cook by package directions
6 oz chicken cut into cubes (breasts or thighs work)
1/4 green bell pepper cut into squares
1/4 onion cute into squares
2-3 Roma Tomatoes seeded and chopped
1-2 Garlic cloves chopped
1 Jalapeno chopped (Optional)
1/4 cup chicken broth (if it cooks off add a bit more)
1 tbsp Italian Seasoning. (or to taste)

Saute onion, pepper, jalapeno and garlic until onion is translucent. Add
Chicken until browned, add broth and tomatoes and simmer while pasta cooks. Once pasta is done, mix with a little salt and oil, serve with chicken mixture over the top. Sprinkle with Parmesan cheese.

Pairs well with a crisp white or rose wine. Salad goes well with it also.

Easy Turkey Meatloaf

Easy Turkey Meatloaf

1 lb. Ground Turkey
1 Egg
1/4 cup Onion chopped
1/4 cup Jalapenos chopped (optional)
1 - 2 Cloves garlic chopped
1 tbsp Worcestershire sauce
3-4 crackers mashed
1 tsp Ground Mustard
Salt and Pepper to taste
1/4 cup Italian Tomato Sauce

Heat oven to 400 Degrees. Put the turkey in a bowl. Add all ingredients
except Tomato Sauce.  Mix thoroughly before placing in a 5x8 baking dish or pan. Shape into a mound. Pour Tomato Sauce over the top. (Traditional Meatloaf topping can be used.) Bake for 40 minutes until done all the way through.

Serve with a salad or rolls. Pairs well with a light Red Pinot Noir.

Pepper Gravy with Sausage over Spaetzle

Pepper Gravy with Sausage over Spaetzle - Serves 4
Home cooked meal in a hurry with a German flair.

1/2 package Spaetzle (Can be used with regular noodles)
3 Chicken Sicilian Sausage (Trader Joe's) sliced.
1 package Pepper Gravy mix
1/4 cup chicken broth
1/4 onion chopped large
1/2 jalapeno (optional) chopped
1 clove garlic chopped
4-6 brown mushrooms cut in half
Salt and pepper to taste.
2 cups water

This is a very easy and fast dinner. Saute garlic, onion, and jalapeno until onion is translucent. Add broth and sausage and cook until almost done, liquid will almost be gone. Then add 1 1/2 cup water. Bring to boil. Mix the gravy mix with 1/2 cup water until smooth. When water is boiling in pan stir in. Let simmer.

Cook pasta/spaetzle per package instructions. Serve with a salad. Pairs well with a white or rose wine.

Sausage w/wine reduction over Penne Pasta

Tonight I didn't want to spend much time cooking. However, I wanted something delicious. I threw together this awesome pasta dish.

Sausage with Wine Reduction over Penne Pasta - serves 2
2 links Spicy Jalapeno Chicken Sausage (Trader Joe's) sliced
6-8 small cherry heirloom tomatoes cut in half
1/4 Green Bell pepper cut into squares 
1/4 Red Bell pepper cut into squares
1/4 Red onion cut into squares
1 Clove Garlic chopped
1/4 - 1/2 Jalapeno chopped
4 -5 mushrooms cut in half
2 tablespoons Kalamon Olives (Organic, Trader Joe's)
1 1/2 tsp Italian Seasoning
1/4 cup Chicken broth
1/4 cup Red Wine
1 Tbsp olive oil
6 oz Penne pasta

In large frying pan add oil and saute garlic and Jalapeno, when soft add sliced sausage. Let simmer. In sauce pan add water and a dash of salt and a dab of oil. Bring water to boil add penne pasta cook until al dante. 

While pasta is cooking, add the rest of the ingredients, with the exception of wine, mushrooms, tomatoes and olives, to the frying pan. And spices and stir.

Bring to a boil and set to medium and cook until broth cooks down, then add wine, mushrooms, tomatoes and olives cook another 2 or 3 minutes. When pasta is al dente add to the pan and and stir and cook for 2 more minutes. 

Serve with rolls and it pairs well with Pinot Noir.

Banana blueberry pancakes

Sometimes you just want pancakes for breakfast! You can be healthy with your pancakes. Just try this recipe for pancakes with banana and blueberries. I have a little secret ingredient. I'm sure it's not a secret as I think. Anyway, here goes.

Banana Blueberry Pancakes
Pancake mix of your choice (I'm lazy).
Add Mashed banana
Blueberries
1 - 3 Tsp of Vanilla (real if you can afford it, or extract)
Ground Cinnamon to taste.

Bisquick has a recipe for pancakes, I use Trader Joe's All Purpose baking
mix for mine. I mix the egg in and vanilla (I use pure vanilla) until it's a thick paste. Then I gradually add the water until it's the consistency I want. I mash the banana and add to mix stirring thoroughly last I sprinkle in the cinnamon and blueberries and cook until golden brown on my skillet. I serve with chicken sausage.

Enjoy. We serve fresh ground coffee made with a French press.
