Chicken and veggies over Linguine

Sometimes you just need to have something fast and easy when you don't feel like cooking. Well here is just the recipe.

Chicken and veggies over Linguine

Serves 2
6 oz Linguine - cook by package directions
6 oz chicken cut into cubes (breasts or thighs work)
1/4 green bell pepper cut into squares
1/4 onion cute into squares
2-3 Roma Tomatoes seeded and chopped
1-2 Garlic cloves chopped
1 Jalapeno chopped (Optional)
1/4 cup chicken broth (if it cooks off add a bit more)
1 tbsp Italian Seasoning. (or to taste)

Saute onion, pepper, jalapeno and garlic until onion is translucent. Add
Chicken until browned, add broth and tomatoes and simmer while pasta cooks. Once pasta is done, mix with a little salt and oil, serve with chicken mixture over the top. Sprinkle with Parmesan cheese.

Pairs well with a crisp white or rose wine. Salad goes well with it also.

Easy Turkey Meatloaf

Easy Turkey Meatloaf

1 lb. Ground Turkey
1 Egg
1/4 cup Onion chopped
1/4 cup Jalapenos chopped (optional)
1 - 2 Cloves garlic chopped
1 tbsp Worcestershire sauce
3-4 crackers mashed
1 tsp Ground Mustard
Salt and Pepper to taste
1/4 cup Italian Tomato Sauce

Heat oven to 400 Degrees. Put the turkey in a bowl. Add all ingredients
except Tomato Sauce.  Mix thoroughly before placing in a 5x8 baking dish or pan. Shape into a mound. Pour Tomato Sauce over the top. (Traditional Meatloaf topping can be used.) Bake for 40 minutes until done all the way through.

Serve with a salad or rolls. Pairs well with a light Red Pinot Noir.

Pepper Gravy with Sausage over Spaetzle

Pepper Gravy with Sausage over Spaetzle - Serves 4
Home cooked meal in a hurry with a German flair.

1/2 package Spaetzle (Can be used with regular noodles)
3 Chicken Sicilian Sausage (Trader Joe's) sliced.
1 package Pepper Gravy mix
1/4 cup chicken broth
1/4 onion chopped large
1/2 jalapeno (optional) chopped
1 clove garlic chopped
4-6 brown mushrooms cut in half
Salt and pepper to taste.
2 cups water

This is a very easy and fast dinner. Saute garlic, onion, and jalapeno until onion is translucent. Add broth and sausage and cook until almost done, liquid will almost be gone. Then add 1 1/2 cup water. Bring to boil. Mix the gravy mix with 1/2 cup water until smooth. When water is boiling in pan stir in. Let simmer.

Cook pasta/spaetzle per package instructions. Serve with a salad. Pairs well with a white or rose wine.
