Quick Custard Cake by Kelli Wilkins


Quick Custard Cake
This is a great no-bake recipe. It’s cool, light, and everyone loves it.

Ingredients:
1 prepared angel food cake (10 inches)

1 package (3.4 ounces) instant lemon pudding mix
1 ½ cups cold milk
1 cup (8 ounces) sour cream
1 can (21 ounces) cherry pie filling
Directions:
Tear the angel food cake into bite-sized pieces. Arrange in a 13 inch x 9 inch x 2 inch pan. In a mixing bowl, combine the pudding mix, milk, and sour cream. Beat until thickened (about 2 minutes). Spread over cake, then spoon pie filling on
top.
Chill until serving time.
Options:
This simple recipe can be modified in a variety of ways. If you want to make it extra “custardy” use a larger packet of pudding mix. Want more fruit? Use a bigger can of pie filling. 

You can also change up the flavors and substitute vanilla pudding for lemon, or use strawberry or blueberry pie filling instead of cherry.

Corn and Black Bean Salad by N. N. Light


Welcome N. N. Light to the After Work Cook. They have some good things cooking!
If you’re anything like us, when the humidity of August hits, the last thing you want to do is slave over a hot stove. In August, there’s so many fresh vegetables in season, it’s easy to incorporate them into cool dinners. No, I don’t mean hip but cool as in temperature. One of our favorites is Mr. N’s Corn and Black Bean salad. It’s easy to make with fresh in-season ingredients and can be used as a side or a main.

Corn and Black Bean Salad

Ingredients:

4 cans of black beans, drained and rinsed
1.5 kilo of frozen or fresh corn
½ cup chopped red onion
1 red bell pepper, diced
1/3 cup cilantro
1/3 cup fresh-squeezed lime juice
2 teaspoons honey
1 teaspoon hot sauce (optional but gives great flavor to the salad)
1 teaspoon cumin
1/3 cup extra virgin olive oil (best you can find)
Salt and pepper, to taste

Directions:

In a large bowl, combine black beans, corn, red onion and red bell pepper. Set aside.

In a small bowl, mix lime juice, olive oil, honey, hot sauce, cumin, salt and pepper. Whisk until it resembles a dressing.

Pour over vegetables and toss until dressing is coating vegetables. Taste and adjust seasoning, if necessary. Fold in cilantro and serve.

Will stay fresh in the refrigerator for a week to ten days.

More on where to eat, Downtown SLC series

One of my favorite places is SPITZ. It's Mediterranean street food. Has vegan, a variety of meats. It's a wonderful place for lunch or dinner. They have a full bar and a patio for you to enjoy. On 3rd south (Broadway) between State and Main.

They also have a locations in Sugarhouse, Cottonwood, and Lehi. My favorite is Zesty Feta Doner and Street Cart Fries. They have wonderful mixed drinks. Unique. You can check out their menu here. 

I highly recommend it for lunch, after work cocktails or dinner.
