Sweet Cornbread Muffins
Ingredients
Ā½ cup cornmeal
1 Ā½ cups flour
2/3 cup sugar
1 Tbs baking powder
Ā½ teaspoon salt
1/3 cup vegetable oil
3 Tbs. melted butter
1 Tbs. honey
2 eggs, beaten
1 Ā¼ cups milk
Directions:
Preheat oven to 350 degrees.
Spray muffin tins with nonstick cooking spray.
In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.
In another bowl, mix together the oil, melted butter, honey, eggs, and milk.
Add milk mixture to dry ingredients and stir just until combined.
Fill muffin tins 2/3 full with batter.
Bake for 17 minutes or until edges of muffins are golden brown.
Makes 18 muffins
